thanksgiving - in year's past it was just an extra long weekend for me to take advantage of, go somewhere, etc. but this year, the holiday took on a slightly different meaning for 2 reasons: 1) i'm on vacation 'full-time' (which i'm really thankful for!) and 2) this is our last thanksgiving in the US for the foreseeable future as we'll be returning to m'sia in a couple of months. ... (slightly delayed from original plan - but that's the phD process and so we're thankful for the additional time in the country and hope to enjoy it fully)
Dave and Holly invited us to spend thanksgiving together with them and his parents (who flew in from Massachusetts) at Sebastian and Lila's home in Burlington in the historic mills village of Glencoe. how could we say 'no' to another chance to partake of deep fried turkey?
thanksgiving prep began on Wednesday night. we baked 2 pear, ginger and maple pies - and our second batch of miniature carrot, rosemary and parmesan scones to take with us to Burlington. the pie was for dessert and the scones were for munching on while we prepared thanksgiving dinner. it was nice to have a 'helper' to do all the chopping, mincing and grating for me. :D
the next morning, we woke up to cold cold and foggy weather but went for a run at the duke forest anyways since we were going to be stuffing our faces that day. then it was home to shower and pack and off we were for our mini countryside getaway!

5 hours of prep work for a meal that lasted ...? haha. anyways. here we are in lila's wonderfully equipped country kitchen. it is truly the hearth of the home - and there was as much talking, laughing, eating and drinking in addition to the 'main' activity of cooking.

how do you deep fry a turkey? ask okm, who's almost an expert now :)
and finally, here we are enjoying the thanksgiving feast.
the menu:
turkey and cranberry sauce
dressing I (i forget what went into it)
cornbread sage dressing
greenbeans
mashed potato and gravy

pumpkin mousse with ginger whipped cream
and my pear, ginger and maple pie

a chocolate stout
sometime between the main meal and the cheese course we went out for a walk around the neighborhood and along the way go rained on. and it was still pouring when we left which made very glad that we didn't have too far to drive to the hotel. we had the best sleep that night :)

it was cold and windy the next morning but we decided bundle up and go for a hike at cedarock park about 6miles south of I85. it is a pretty decent sized park with a lake and historic farm. after an invigorating hike - we headed home via saxapahaw where we stopped for a delicious roasted vegetable sandwich and coffee at the general store.
i had a great thanksgiving holiday. hope you did too :)
